The problem with those signs is that many criminals are illiterate, and thus don't know they aren't allowed to enter with a gun.

As you say, the problem must be illiteracy. Literate criminals would obey the signage.

Well they got what they deserved.
The ones smart enough to understand the sign are smart enough to know that they most likely won't get shot by a patron while robbing the place.
Might just as have put up a sign that says "Robbers welcome, no one inside is armed"
We're dealing with two very different cultures here, "ours" and "theirs", both of whom are likely to view this as a cautionary tale.
Our (gun owners) view is that these unarmed fools are willful victims surrendering to, and enabling criminal elements in their natural behavior.
Their (gun prohibitionists) view is that these innocents are victims of an evil gun lobby who enable criminals by providing them access to firearms simply to sustain an illegitimate industry of gun manufacturers.

Hmmm... Think I'll continue to bet on the side with the guns to win out. If nothing else, they get to have a voice in whether or not they'll be going extinct.
In RI we don't have signs like this. Does anyone who carries concealed really pay any attention to these? I would think most people who carry concealed understand that they are, well, carrying concealed...
"Concealed means concealed" is an attitude that it may be safe to adopt in states where ignoring a sign carries no criminal sanction. But relying on not being discovered in a state WITH criminal sanctions carries some real risks.
For example, suppose you get severely injured by some fight between two other people, or a chandelier falls on your head, or you have a heart attack, so that you're still on the floor of the restaurant, wearing your (well concealed) gun, when the ambulance folks show up. How do you think that will likely play out? If ignoring the sign is a felony in your state, there's a fair chance you'll never be able to touch a firearm again.
Here in MO I generally ignore the no-gun signs on private businesses, as there's no criminal penalty for doing so. But I have been known to carry my (well concealed) gun into the Post Office to check my PO box on a Sunday, when the building is empty and locked up except for the box lobby. Even though I'm inside for less than 60 seconds, I still worry about having a stroke or heart attack and not being able to get out of the building with my gun. So even though the risk of becoming disabled on any given visit is extremely small, I usually go through the lock-up-the-gun-in-the-car process before I go into the PO, and retrieve it when I get done, simply because the consequences under FEDERAL law of being discovered with a gun in the building are so severe.
